Fast and Tasty Summer Desserts to Try

Summer is here, and with it comes thoughts of cookouts and ice cream bars. If you’re feeling like whipping up something tasty for your next get together, or even just to enjoy in your Standard at Domain apartment for yourself, here are some ideas that are sure to get the taste buds excited.

Grasshopper Ice Box Cake
Who wants to heat up the apartment with the oven on a hot summer day? The Grasshopper Ice Box Cake protects you from this! It’s also quite easy to do. Take 19 mint-cream filled chocolate sandwich cookies, 1 ½ cups whipping cream, 3 tablespoons of crème de menthe, and 1 tablespoon of sugar. Cut 15 of the cookies into quarters and set aside. Grease a 6×3-inch spring-form pan, then line it with plastic wrap. Next, beat the remaining non-cookie ingredients with a mixer until it holds firm peaks.

Now you’re ready to make the cake. Spoon a third of the mixture into the pan, then tap the pan to remove the air bubbles. Add a cup of the cut-up cookies. Repeat these layers, with a crème layer on top. Allow the cake to chill for at least 24 hours, then top with the remaining cookies, crumbled on top.

Ice Cream Cookie Cake
This particular cake takes a day to make, but the flavors are well worth the effort. Most of the time is spent freezing the cake, so don’t let the time deter you from trying. Just plan ahead!

Grab 2 pints of a pink colored ice cream, like strawberry or black cherry, 2 cups of crushed shortbread or cookies of any flavor, 1/3 cup melted butter or margarine, ½ cup toffee pieces, 1-pint pistachio ice cream, and 1-pint chocolate ice cream.

Start with the pink ice cream. Scoop 2-inch balls and place on a chilled, lined baking sheet. Freeze this. While it is freezing, combine the crushed cookies, butter, and toffee pieces. Press half of this mixture into the bottom of a 9-inch spring-form pan, and freeze until firm. Allow the pistachio ice cream to soften, then spread over the cookie mixture. Freeze this for one hour until set, then repeat with the chocolate ice cream. Once set, place the pink ice cream balls over the top, leaving an edge of about 1 inch around the cake. Sprinkle the remaining cookie mixture over top and freeze for a minimum of 6 hours.

Once the cake is done freezing, place whipped cream into a decorating bag with a large star tip. Pipe some whipped cream on top of the cake, slice, and serve.
